Do the coins earned while playing a slot tournament count towards the crews goals even if we don’t win a tournament, only rank? Or do the coins only count towards the goals when playing regular slots outside of the tournaments?

This seems like a question that can be answered by playing the game.
I’d suggest doing a slot tournament, and checking whether or not your Crew’s coin score goes up as you play your slot tournament.
